Corn flour halwa

Corn flour halwa is also known as karachi halwa. It is very easy to prepare and does not require much ghee like other sweets. It has a glossy finish and can be cut into pieces also. Even beginners can try this easy sweet without much hassles. I saw this recipe from this blog and wanted to try it.

Makes :  30 pieces


Ingredients


  • Corn flour(white)  -  1/2 cup
  • Sugar  -  1 1/2 cups
  • Water  -  1 + 1 1/2 cups
  • Ghee  -  1 to 2 tbsp
  • Raisins  -  as required
  • Cashew nuts  -  as required
  • Food colour  -  little (I used yellow food colour)


Method

  1. In a wide bowl, mix corn flour with 1 1/2 cups of water without lumps.
  2. Add food color to it and mix well.
  3. Take little ghee in a pan and fry the cashew nuts and raisins till golden brown.
  4. In the same pan, add sugar and 1 cup of water and allow it to melt down.
  5. Once the sugar syrup starts to boil, add the corn flour + water mixture and mix well.
  6. At one stage, the mixture will turn glossy.
  7. Keep stirring and cook till it leaves the sides of the pan. At this stage, add the fried cashews and raisins and the remaining ghee.
  8. Switch off the stove and allow it to cool down for at least 1 hour, before cutting into pieces.

Notes


  • Mix the cornflour well with water to avoid lumps formation.
  • Out of the 2.5 cups of water, use 1.5 cup for mixing corn flour and the remaining 1 cup for melting sugar.
  • There is no sugar syrup consistency check to be done for this sweet. The corn flour can be added once the sugar syrup starts to boil and is slightly thick.
  • Allow the sweet to set for at least an hour to cut into proper pieces. If it has to be served in halwa like consistency, it can be done immediately after cooking.
  • It stays well in room temperature for minimum 2 days.
