Rava Kesari

Rava kesari is the easiest sweet that can be prepared with very simple ingredients and does not require much planning. If the points in the notes section are followed, the sweet comes out perfect.

Rava Kesari Recipe

Serves  :  5 -6 people


Ingredients


  • Rava/Sooji   -  1 cup
  • Ghee  -  1 cup
  • Sugar  -  2 cups
  • Water  -  3 cups
  • Raisins  -  as required
  • Cashew nuts  -  as required
  • Food colour  -  little (I used yellow food colour)


Method


  1. Take little ghee in a pan and fry the cashew nuts and raisins till golden brown.
  2. In the same pan, add the remaining ghee and roast rava till nice aroma comes.
  3. Boil 3 cups of water and once it starts boiling, add the roasted rava and cook. Add food colour at this stage by mixing with little water.
  4. Once rava is cooked, add sugar and mix well. It will form a liquid mass initially but will eventually blend and form a solid mixture.
  5. Once the mixture leaves the sides of the pan, add the fried cashew nuts and raisins and switch off the stove.


Notes


  • Using the entire ghee to roast rava prevents in the formation of lumps.
  • Ratio of the ingredients  -  rava & ghee (1 cup) :  sugar (2 cups) :  water(3 cups).
  • To speed up the cooking, boil water in parallel and use for cooking the rava.
  • You can even add little cardamom powder/instant badam mix for added flavour.
