Baby Corn Masala

Baby corn masala is a delicious side dish which can be prepared as an accompaniment for any simple pulaos or roti.

Baby Corn Masala Recipe

Serves  :  3 - 4 people

Ingredients


  • Baby Corn  - 15 to 16 pieces
  • Onion  -  1 medium sized, finely chopped
  • Cumin seeds  -  1 tsp
  • Fennel seeds  -  1/2 tsp
  • Turmeric powder  -  1/2 tsp
  • Red chilli powder  -  2 tsp
  • Kasoori methi  -  little, for garnishing
  • Coriander leaves  -  little, for garnishing
  • Salt  -  as required
  • Water  -  as required
  • Oil   -  2 tbsp


To grind

  • Onion  -  1 medium sized
  • Tomato  - 1 medium sized
  • Garlic  -  2 big pods or 4 small pods
  • Ginger  -  a small piece
  • Cashew nuts  -  5


Method


  • I used baby corns which are cut from the outer stalk and sold in packets and hence used it as such. If using the ones with stalk, peel the baby corn and take the pieces out. 
  • Trim both the edges of the baby corn and cut into the desired shape. I chopped them into small cylindrical pieces.
  • Wash and pressure cook for 2 to 3 whistles by adding little salt and water.
  • In a pan, add little oil and once it is heated up, add onion and fry till transparent. Then add the tomatoes, garlic and ginger and fry till mushy.
  • Grind this along with the cashew nuts to a smooth paste by adding required water.
  • In the same pan, add the remaining oil and once it is heated up, add fennel and cumin seeds.
  • Once they crackle, add onion and saute well.
  • Once onion turns transparent, add turmeric powder, red chilli powder and salt and mix well. 
  • Once the raw smell leaves, add the ground paste and mix well. Once the masala is cooked well and the oil oozes out, add the cooked baby corn along with the water and mix well.
  • Add more water if required. Cook till the baby corn blends with the masala.
  • Crush little kasoori methi leaves between your palm and add it along with finely chopped coriander leaves.
  • Serve hot with any mild pulao or roti varieties.

Notes


  • Cashew nuts are added to thicken the masala.
  • Capsicum can be added in the dish along with baby corn. If adding. add after onion is fried.
  • For more flavour, garam masala can be added.
