Verum arisi adai - Drumstick leaves adai

Verum arisi adai is a healthy dosa variety prepared with idli rice. This is a healthy and filling breakfast as we add drumstick leaves which is rich in iron. This is my mil's trademark recipe. She makes it so well and i came to know about this variety of dosa only after marriage. The texture of the dosa is in between the regular dosa and adai variety.






Ingredients



  • Idli rice  -  1.5 cups
  • Drumstick leaves  -  1 cup
  • Salt  -  as required


Method


  1. Wash and soak rice for 4 to 5 hours.
  2. Grind it by adding required water just like how we grind rice for idli. The batter should be thick and not watery. So adjust water accordingly.
  3. Refrigerate it till use. Add salt only at the time of making dosas.
  4. Before preparing dosas, remove drumstick leaves from the stalk and clean it well by rinsing in water for at least 3 to 4 times.
  5. Add the cleaned drumstick leaves to the batter. Add salt and water(if required) and mix well. The batter will be thick as we are adding drumstick leaves.
  6. Heat a tawa and pour a ladle of batter in the tawa. This dosa will not spread much like the regular dosas.
  7. Drizzle oil and cook evenly on both sides so that the drumstick leaves are also cooked properly.
  8. Serve hot with any chutney or sambar of your choice.

Notes


  • Whenever we have drumstick leaves in hand, my mil usually soaks idli rice additionally while soaking for idli/dosa batter and prepares this batter.
  • The batter does not need to be fermented. We can grind the batter and keep it in refrigerator till use.
  • Add salt only at the time of preparing the dosas.
  • We usually prepare this dosa only for breakfast. As we are using drumstick leaves, it is not advisable to consume it in the night.
